Pan-Cooking Thicker Fish Steaks Very Fast and Easy
In most of my steak recipes, I prefer seasoning before cooking. Mom said salting during or after the cooking process may be preferable, but using traditional soy sauce and coating the steak in great spices and oil before covering and leaving in the fridge for a couple of hours is my preference.
Knowing how to cook even a thick cut of steak is really just a matter of following rules. It's only about heating your pan properly, using just an ample amount of oil, flipping at the right time, and allowing the meat to rest. When I learned cooking thicker steaks, I did not only discover pan-roasting but learn another technique of making juicier and more flavorful steaks. I've never had any regrets trying something new every time. Thanks to my brother in law, now I can make a thick cut of fish steak even more fantastic very fast and easy. Here's how:
After thawing and drying all sides of your fish steaks, sprinkle with a little salt and pepper coating all sides. I put more pepper for a spicier tang. Preheat your oven to 400° F. Heat a large cast iron pan or skillet for about 2 minutes, pour vegetable oil into the pan and heat for more until pan starts to smoke. Add the fish individually giving enough space so the steaks do stick together and will sear nicely. Crowding the fillets will result to steaming and not searing.
After 3 minutes, flip over each steak, and sear for 3 more minutes. If you're using a non-stick skillet, the fish will not stick and you will have a beautifully-shaped seared thick cut fish steak. Bring the skillet into the oven right away and bake until desired doneness. When ready, take out pan from oven and transfer the steaks to platter.
A typically thick fish sears adequately for 4 minutes which is enough to get a medium-rare juicy and tender steak. For a 1-1/2 or thicker steak, cook to medium rare for 6 minutes per side. Take note of the 6 minutes in every side. This will give you fantastically-browned fish steaks. Make your own sauce combination or simply deglaze the skillet with a little wine and butter, stir and season the mixture and yum! This will give you a simple but fabulous sauce that you can pour over the fish steaks.

Does anyone know what kind of seasoning goes on the flat iron steak at TGI Friday's?
I had the flat iron steak and loved the seasoning on it. I'd love to know what was in it so I can use it on my steaks at home. Oh, and it wasn't the Jack Daniel's one, just the regular flat iron steak.
Some restaurants even sell the bottled seasoning.
